PEACH CAPRESE SALAD





INGREDIENTS:

  • 4 ripe tomatoes, sliced thick

  • 4 ripe peaches, sliced thick

  • 12 ounces Mozzarella, sliced thick

  • fresh basil leaves

  • EVOO of your choice

  • Peach Balsamic Vinegar for drizzling

  • Sea salt and fresh ground black pepper, to taste

DIRECTIONS:

Arrange tomato, peach and mozzarella slices on a platter placing basil leaves between layers. Drizzle olive oil and peach balsamic evenly over the entire salad. Finish with a sprinkling of sea salt and black pepper.
