INGREDIENTS:
1 (12-oz) package multi-colored rotini pasta
1 (1 lb) package penne pasta
1 red bell pepper, finely diced
1 (14.75-oz) jar marinated artichokes, cut into thirds (save marinade for dressing)
1 bunch green onions, chopped
1 can black olives, sliced
8 ounce package of mini pepperonis
8-12 oz feta cheese
Reserved marinade from artichokes
¾ cup Garlic Olive Oil
⅓ cup + 2 tablespoons Balsamico Bianco
2 tsp. dried oregano
4 teaspoons fresh basil
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon Dijon mustard
DIRECTIONS:
Combine ingredients for salad (through feta) and toss.
Whisk together remaining ingredients to create the dressing. (Don't forget to add the liquid from the artichokes.)
Pour over salad and toss to coat evenly.
