INGREDIENTS:
SALAD
2 - 15 oz cans black beans, drained and rinsed
1 - 17 oz can whole kernel corn, drained
2 large tomatoes, chopped
1 large avocado, diced
1/2 red onion, chopped
1/4 cup fresh cilantro, chopped
DRESSING
1 tablespoon Pedro Ximenez Sherry Vinegar
4 tablespoons lime juice
2 tablespoons Cilantro and Red Onion Olive Oil
1 teaspoon salt
1/2 teaspoon ground pepper
DIRECTIONS:
Combine all salad ingredients together in bowl.
Combine dressing ingredients together and mix with immersion blender. Pour over salad and toss
