INGREDIENTS:
Vinaigrette:
3 tablespoons Lemon Olive Oil
1 tablespoon Blueberry Balsamic Vinegar
1 teaspoon local honey
1/4 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1 teaspoon finely chopped fresh rosemary
Salad:
2 cups spinach, torn
1/4 cup sliced strawberries
1/4 cup blueberries
1/4 cup blackberries
1/2 cup thinly sliced raw beets
3/4 ounce crumbled goat cheese
1 1/2 tablespoons chopped walnuts
DIRECTIONS:
To prepare vinaigrette, combine first six ingredients and mix well.
To prepare salad, combine spinach, fruit and beets on a plate and sprinkle with cheese and walnuts. Add dressing and toss well.
